Gluten Free Banana Chocolate Chip Muffins. Line a muffin pan with parchment muffin liners or grease muffin cups. In a food processor (or stand mixer or bowl with a hand mixer), puree or mash bananas until fairly smooth.
To a large mixing bowl add banana, flax egg (flaxseed meal and water) and mash to combine, leaving only a few chunky pieces. Mix thoroughly and make a well in the centre. With the mixer still on medium, sprinkle in the baking soda, baking powder, and salt.
In a large mixing bowl, mash the ripe bananas with a fork until completely smooth.
In a separate bowl combine the flour, baking powder, baking soda and blend together well.
Add the mashed bananas, baking mix, baking soda, cinnamon, and nutmeg, mixing until blended. Beat the egg in a small bowl until frothy. Mix in cooking oil, milk and bananas.
