Easy Chocolate Eclair Recipe. In a large saucepan, bring water, butter and salt to a boil. Top with another layer of graham crackers and the remaining pudding.
Remove from heat and quickly add Edmonds Standard Grade Flour. Mix together the salt, sugar and flour and Set aside. Stir in the powdered sugar and vanilla until well combined.
Alternate the graham cracker and pudding layers up to the top of the pan.
Spread the remaining pudding mixture on top, and top that with a final layer of graham crackers.
