Dipping Chocolate That Hardens
Dipping Chocolate That Hardens. When the chocolate is cooled, it hardens. (Adding oil to the chocolate was your downfall.) See our How to Melt Chocolate video for more tips. by: Jim For chocolate that is to be dipped and left to harden, try melting some household paraffin wax and mixing the chocolate into it while it is still hot. Be sure to use only wax that is intended for cooking, preserving, and candy making.
Chop the chocolate across, so that it splinters like shown. To use a double-boiler, place a glass or metal bowl snugly over. If you touch it, your finger will come away clean.
Three or four zaps should be enough to completely melt the chocolate.
Spread evenly into a parchment lined loaf pan.
It will set quite quickly after dipping and will stay hard at room temperature. Don't touch or stir the chocolate. Afterward, put your chocolate chips and vegetable shortening inside a small or medium-sized bowl.
